Macellaio RC, founded by Roberto Costa, has three restaurants in London, located in Exmouth Market, South Kensington and Union Street that showcase the best produce from Italy with an emphasis on steak - beef and tuna - as well as an in-house butchery and a Ligurian bakery in their Union Street restaurant.
Passionate about serving the finest ingredients from his native homeland, Roberto’s ethos, or Metodo Costa, is simple: choose the best produce and cook simply to let the natural flavours shine through. Costa strongly believes that the process of maturation is key to developing the authentic Italian flavour of the dishes at his restaurants, as seen with the dry-ageing of the beef (5-7 weeks) and tuna (10 days) and the complex process of creating the dough (48 hours) in the bakery at Union Street, essential to enhance the bread’s aroma and digestibility.
